Add a lifecycle word

/api/contact-stages

is_default: true REPLACES the previous default rather than joining it — a workspace has exactly one stage a new contact lands in, and the database holds that with a partial unique index.

A stage cannot be both won and lost; the refusal names the problem instead of surfacing a column CHECK as a 500.
